  • 2 medium sweet potatoes, peeled and cut into bite-sized cubes
  • 1 tablespoon olive oil
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • Black pepper to taste

For the salad:

  • 6 cups mixed greens, spinach, or chopped romaine
  • 1 cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • 1 avocado, sliced
  • ¼ cup chopped pecans or walnuts, optional
  • 2 tablespoons pumpkin seeds, optional

Simple Honey Dijon Dressing

  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice or apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey
  • 1 small garlic clove, minced
  • Black pepper to taste
  • Small pinch of salt

Instructions

1. Roast the Sweet Potatoes

Preheat your oven to 425°F.

Place the cubed sweet potatoes on a baking sheet. Add olive oil, smoked paprika, garlic powder, and black pepper. Toss everything together until the potatoes are evenly coated.

Spread them into a single layer.

Roast for approximately 25–30 minutes, turning them halfway through cooking. They’re ready when tender inside and lightly browned around the edges.

2. Cook the Chicken

While the sweet potatoes are roasting, season the chicken with garlic powder, smoked paprika, onion powder, black pepper, and salt.

Heat one tablespoon of olive oil in a skillet over medium heat.

Cook the chicken until browned on the outside and cooked completely through. The thickest part of the chicken should reach an internal temperature of 165°F.

Remove it from the skillet and allow it to rest for about five minutes before slicing.

Resting the chicken before cutting helps keep those flavorful juices inside.

3. Make the Dressing

Add the olive oil, lemon juice or apple cider vinegar, Dijon mustard, honey, minced garlic, pepper, and salt to a small bowl or jar.

Whisk or shake until thoroughly combined.

Taste the dressing and adjust it to your preference. Add a little more lemon juice for extra acidity or another touch of honey if you prefer it sweeter.

4. Build Your Salad

Divide the greens among four bowls.
