Ingredients for the Crispy Chicken

  • 1 1/2 pounds boneless, skinless chicken breasts
  • 1 cup panko breadcrumbs
  • 1/4 cup finely grated Parmesan cheese
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 tablespoon milk
  • Olive oil cooking spray

If your chicken breasts are particularly thick, slice them horizontally into thinner cutlets. Thinner chicken cooks more evenly and gives you more crispy coating in every serving.

Ingredients for the Hot Honey

  • 1/4 cup honey
  • 1–2 teaspoons hot sauce
  • 1/2 teaspoon crushed red pepper flakes
  • 1 teaspoon apple cider vinegar

You can easily adjust the heat level. Start with less hot sauce and red pepper if you prefer mild heat. Add more if you want the chicken noticeably spicy.

Ingredients for the Lighter Mac and Cheese

  • 8 ounces whole-wheat elbow macaroni
  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 1/4 cups low-fat milk
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup plain Greek yogurt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon mustard powder
  • 1/4 teaspoon smoked paprika
  • Salt and black pepper to taste

Optional Garnishes

  • Chopped fresh parsley
  • Chopped green onions
  • Extra red pepper flakes
  • Small drizzle of hot honey
  • Freshly cracked black pepper

Step 1: Prepare the Chicken

Preheat your oven to 425°F.

If you’re using an air fryer, preheat it to approximately 400°F according to your machine’s instructions.

Pat the chicken dry with paper towels.

If necessary, slice thick chicken breasts into thinner pieces. You can also gently pound the chicken to an even thickness.

This is an important step because evenly sized pieces cook at roughly the same speed. It also helps prevent the outside from becoming too dark before the center reaches a safe temperature.

Step 2: Make the Crispy Coating

In a shallow bowl, combine:

  • Panko breadcrumbs
  • Parmesan
  • Smoked paprika
  • Garlic powder
  • Onion powder
  • Black pepper
  • Salt

Mix everything together.

In another shallow bowl, whisk the eggs with the tablespoon of milk.

Dip each piece of chicken into the egg mixture, allowing the excess to drip away.

Then press the chicken firmly into the seasoned panko mixture.

Don’t simply roll the chicken around.

Actually press the breadcrumbs onto the chicken.

That little extra effort helps create a better crust.

Place the breaded chicken on a parchment-lined baking sheet or lightly greased wire rack.

Lightly spray the tops with olive oil cooking spray.

Step 3: Bake Until Crispy

Bake the chicken for approximately 18–25 minutes, depending on its thickness.

Flip the chicken about halfway through cooking and lightly spray the other side if needed.

The chicken should be golden and crispy on the outside and reach an internal temperature of 165°F at its thickest point.

If you’re using an air fryer, cook at approximately 400°F for 10–15 minutes, flipping halfway through. Cooking time will vary depending on the thickness of the chicken and your air fryer.

The air fryer is especially good for this recipe because circulating hot air helps create a crunchy exterior with very little added oil.

Step 4: Make the Hot Honey

While the chicken cooks, combine the honey, hot sauce, crushed red pepper flakes, and apple cider vinegar in a small saucepan.

Warm over low heat for a couple of minutes.

You don’t need to boil it.

You’re simply warming the ingredients enough for the flavors to combine.

Taste carefully and adjust the heat.

Want it sweeter? Add a little more honey.

Want more heat? Add hot sauce or crushed red pepper.

Want additional tanginess? Add another splash of apple cider vinegar.

Set the hot honey aside.

Step 5: Cook the Pasta

Bring a pot of lightly salted water to a boil.

Add the whole-wheat elbow macaroni and cook according to the package directions until al dente.

Drain and set aside.

Whole-wheat pasta is an easy way to give traditional macaroni and cheese a nutritional upgrade. It generally provides more fiber than traditional refined pasta while still working beautifully with a creamy cheese sauce.

If you don’t like whole-wheat pasta, however, use your favorite pasta.

Healthy eating should also be realistic.

Step 6: Make the Lighter Cheese Sauce

Melt one tablespoon of butter in a saucepan over medium-low heat.

Add the flour and whisk continuously for approximately one minute.

Slowly pour in the milk while whisking.

Continue cooking until the mixture begins to thicken.

Reduce the heat to low.

Add the shredded sharp cheddar gradually, stirring until melted.

Then add:

  • Garlic powder
  • Mustard powder
  • Smoked paprika
  • Black pepper

Remove the saucepan from the heat before stirring in the Greek yogurt.

This is important because extremely high heat can cause yogurt to separate.

Mix until everything is smooth and creamy.

Finally, fold in the cooked macaroni.

If the sauce becomes too thick, add a splash of milk until you reach your preferred consistency.

One of my favorite tricks when making lighter comfort food is choosing ingredients that provide more flavor rather than simply using more ingredients.

Sharp cheddar is perfect for that.

Because it has a stronger flavor than mild cheddar, you don’t necessarily need as much cheese to make the dish taste cheesy.

The same principle works throughout this recipe.

Smoked paprika provides depth.

Mustard powder enhances the cheese.

Parmesan strengthens the flavor of the chicken coating.

Hot honey provides sweetness and heat.

Instead of relying exclusively on fat and salt for flavor, we’re building layers of flavor using spices and seasonings.

Step 7: Add the Hot Honey

Once the chicken has finished cooking, allow it to rest for several minutes.

Then drizzle a small amount of hot honey over each piece.

Don’t completely soak the chicken.

Whole-Wheat Pasta Adds Fiber

Whole-wheat macaroni gives the meal more fiber than conventional refined pasta.

You could also experiment with chickpea or lentil pasta if you want additional protein and fiber.

Greek Yogurt Adds Creaminess

Plain Greek yogurt helps make the cheese sauce creamy without requiring heavy cream.

It also contributes additional protein.

We’re Controlling the Cheese

Macaroni and cheese can quickly become extremely calorie-dense when several cups of cheese, butter, and cream are added.

Here, we’re using sharp cheddar strategically.

Honey is still added sugar.

The key is that you don’t need an enormous amount.

Want Even More Protein?

There are several easy ways to increase the protein content.

Use a high-protein pasta made from chickpeas or lentils.

Choose Greek yogurt with a higher protein content.

Increase the chicken portion slightly while reducing the macaroni portion.

You could even mix some pureed cottage cheese into the cheese sauce. Once blended and incorporated into the sauce, it can add creaminess and protein without dramatically changing the flavor.

Add Vegetables Directly to the Mac and Cheese

Another easy trick is putting vegetables directly into the macaroni.

Try adding steamed broccoli florets.

For medium heat, use approximately one teaspoon of hot sauce and half a teaspoon of crushed red pepper.

Just remember that you can always add more heat.

You can’t easily remove it.
