  • 1 sheet frozen puff pastry, thawed
  • 4 large eggs
  • 6 slices bacon
  • 1 cup shredded cheddar cheese
  • 1 tablespoon butter, melted
  • 1 additional egg for egg wash
  • 1 tablespoon water
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh chives or green onions
  • Optional red pepper flakes
  • Optional hot sauce for serving

You can also add vegetables, different cheeses, or additional breakfast meats depending on what you have available.

How to Make Bacon and Egg Puff Pastry Galettes

Step 1: Prepare the Bacon

Preheat your oven to 400°F (200°C).

Cook the bacon in a skillet until it is almost crispy. You don’t necessarily want it completely crisp at this point because it will continue cooking in the oven.

Transfer the bacon to a paper towel-lined plate and allow the excess grease to drain.

Once it has cooled slightly, roughly chop or crumble it.

Step 2: Prepare the Puff Pastry

Unfold the thawed puff pastry onto a lightly floured surface.

Cut the pastry into four equal squares.

Place the squares onto a baking sheet lined with parchment paper.

Using a sharp knife, lightly score a border approximately 1/2 inch from the edge of each square. Be careful not to cut completely through the pastry.

This border will puff beautifully during baking and help create the raised edges of your galette.

Step 3: Add the Cheese and Bacon

Sprinkle shredded cheddar cheese inside the scored border of each pastry square.

Add some of the cooked bacon on top.

Try to leave a small open area in the middle where the egg will eventually go.

Step 4: Give the Pastry a Head Start

Bake the pastries for approximately 8–10 minutes.

The pastry should begin puffing and turning lightly golden.

Remove the baking sheet from the oven.

If the center has puffed significantly, gently press it down with the back of a spoon. You want to create a small nest for the egg while keeping the outer edges puffed.

Step 5: Add the Eggs

Carefully crack one egg into the center of each pastry.

If you are worried about breaking the yolk or getting shell into your galette, crack each egg into a small bowl first and then gently slide it onto the pastry.

Season each egg with salt and freshly ground black pepper.

Add a few red pepper flakes if you enjoy a little heat.

Step 6: Finish Baking

Return the baking sheet to the oven.

Bake for another 8–12 minutes, depending on how you prefer your eggs.

For a softer yolk, check them earlier. For a firmer yolk, allow them to bake a little longer.

Remember that eggs continue cooking slightly after being removed from the oven, so take that into consideration when deciding when they are ready.

Step 7: Garnish and Serve

Remove the galettes from the oven and allow them to cool for a couple of minutes.

Sprinkle chopped chives or green onions over the top.

Add another small pinch of black pepper and serve immediately.

Don’t overload the center with toppings. Too many ingredients can weigh down the pastry and make it difficult for the egg to stay in place.

Partially baking the pastry before adding the eggs is also important. Eggs generally cook faster than puff pastry, so giving the pastry a head start helps everything finish at approximately the same time.

Finally, keep an eye on those eggs.

A couple of minutes can make a significant difference between a runny yolk and a completely cooked one.
