  • 1/2 teaspoon onion powder
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon smoked paprika
  • 1/2 cup shredded cheddar cheese, optional
  • 1 tablespoon maple syrup, optional
  • Sesame seeds or everything bagel seasoning, optional

  • Maple syrup
  • Ketchup

How to Make Bacon and Sausage Rolls

Step 1: Prepare the Bacon

Start by cooking the bacon in a skillet over medium heat.

You don’t want to cook it until completely crisp. Instead, partially cook it so some of the fat renders while the bacon remains flexible enough to work with.

The bacon will continue cooking inside the oven.

Transfer it to a paper towel-lined plate and allow it to cool.

Step 2: Prepare the Sausage

Place the breakfast sausage in a large bowl.

Add the garlic powder, onion powder, black pepper, and smoked paprika.

If you want a sweet-and-savory breakfast flavor, mix in about a tablespoon of maple syrup.

Gently combine everything.

Avoid overworking the sausage mixture. You want the seasonings distributed throughout without making the filling overly dense.

Step 3: Prepare the Puff Pastry

Preheat your oven to 400°F.

Line a large baking sheet with parchment paper.

Place your thawed puff pastry onto a lightly floured work surface and gently roll it out.

Cut the pastry into rectangles large enough to hold the sausage filling.

The exact size isn’t terribly important as long as you leave enough pastry to completely surround the filling and seal the edges.

Step 4: Add the Sausage

Form the seasoned sausage into long, narrow portions and place one along the center of each piece of pastry.

Don’t make the sausage layer excessively thick. Smaller rolls cook more evenly and are easier to eat.

If you’re adding cheese, sprinkle shredded cheddar over the sausage.

Step 5: Bring on the Bacon

Lay your partially cooked bacon over the sausage.

Depending on the size of your rolls, you can use a full strip or cut the bacon into smaller pieces.

You want bacon in every serving.

And yes, the combination is as good as it sounds.

Step 6: Roll Them Up

Fold the puff pastry over the sausage and bacon filling.

Press the edges together and seal them with a fork or your fingers.

Place the rolls seam-side down on the prepared baking sheet.

For food safety, ground sausage should reach an internal temperature of 160°F.

Allow the rolls to rest for several minutes before serving.

The filling will be extremely hot when it first comes out of the oven.

The Cheesy Bacon and Sausage Version

Cheese isn’t required, but it’s certainly welcome.

Cheddar is probably my first choice because its sharp flavor works so well with bacon and breakfast sausage.

Pepper Jack is another great option if you want a little heat.

You could also try:

  • Monterey Jack
  • Colby Jack
  • Smoked Gouda
  • Mozzarella
  • Swiss
  • American cheese

Don’t overload the pastry with cheese. A small amount goes a long way, especially once it melts into the sausage and bacon.

Maple Bacon and Sausage Rolls

If you’re someone who likes maple syrup with your bacon and sausage, this variation might become your favorite.

Mix a tablespoon of maple syrup into the sausage before assembling your rolls.

Then prepare and bake everything normally.

When the rolls come out of the oven, serve additional warm maple syrup on the side.
