There are desserts you enjoy, desserts you remember, and then there are desserts that seem determined to combine everything you love into one incredible creation. Chocolate Chip Cookie Dough Cheesecake definitely belongs in that last category.
Imagine a thick, buttery cookie crust supporting a rich and creamy cheesecake filled with chunks of chocolate chip cookie dough. Add even more cookie dough and chocolate chips on top, and you have a dessert that brings together two classics—cheesecake and chocolate chip cookies—in every decadent bite.
This isn’t necessarily the dessert you make when you’re looking for something light. It’s the dessert you make when you want to celebrate, impress your family and friends, satisfy a serious sweet tooth, or simply treat yourself to something special.
Today’s Dessert of the Day: Chocolate Chip Cookie Dough Cheesecake is rich, creamy, chocolatey, buttery, and loaded with cookie dough goodness.
When Cheesecake Meets Chocolate Chip Cookie Dough
Chocolate chip cookies are one of those desserts that instantly feel familiar. The smell of butter, brown sugar, vanilla, and chocolate baking together can make a kitchen feel warmer before you’ve even taken the first bite.
Cheesecake offers something completely different but equally irresistible. It’s smooth, dense, creamy, slightly tangy, and perfect for pairing with countless flavors.
Combining the two creates a dessert with incredible contrasts.
You get the creamy texture of cheesecake against the soft pieces of cookie dough. Chocolate chips provide little bursts of chocolate throughout the filling, while the crust gives every slice a firm, buttery foundation.
Then there’s the topping.
Instead of hiding the cookie dough inside the cheesecake, we’re going to make sure everyone knows exactly what they’re getting by adding pieces of cookie dough and chocolate chips across the top.
Every slice looks as indulgent as it tastes.
A Quick Note About the Cookie Dough
Because some of the cookie dough in this recipe is intended to remain unbaked, it’s important to prepare it differently from regular chocolate chip cookie dough.
Traditional raw cookie dough can contain two ingredients that shouldn’t be eaten raw: eggs and untreated flour.
For this cheesecake, we’ll make edible cookie dough without eggs and heat-treat the flour before using it.
To heat-treat flour, spread it onto a baking sheet and bake it at 350°F for about 5–7 minutes, checking that it reaches 165°F. Let the flour cool completely before making your cookie dough.
This simple extra step lets you enjoy the cookie dough texture and flavor without simply eating traditional raw baking dough.
Ingredients
For the Cookie Crust
- 2 cups crushed chocolate chip cookies
- 5 tablespoons unsalted butter, melted
- 2 tablespoons brown sugar
For the Edible Chocolate Chip Cookie Dough
- 1 cup all-purpose flour, heat-treated and completely cooled
- ½ cup unsalted butter, softened
- ½ cup packed brown sugar
- ¼ cup granulated sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- ¾ cup mini semisweet chocolate chips
For the Cheesecake Filling
- 32 ounces cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 4 large eggs, room temperature
- 2 tablespoons all-purpose flour
- ½ cup mini chocolate chips
- About half of the prepared edible cookie dough
For the Topping
- Remaining edible chocolate chip cookie dough
- ½ cup mini chocolate chips
- Whipped cream, optional
- Chocolate sauce, optional
- Crushed chocolate chip cookies, optional
Step 1: Prepare the Pan
Preheat your oven to 325°F.
Lightly grease a 9-inch springform pan.
For easier removal later, you can place a circle of parchment paper on the bottom of the pan.
If you plan to bake the cheesecake using a water bath, tightly wrap the outside bottom and sides of the springform pan with several layers of heavy-duty aluminum foil. This helps prevent water from leaking into the crust.
Step 2: Make the Cookie Crust
Place your chocolate chip cookies into a food processor and pulse until you have fine crumbs.
You can also place the cookies inside a resealable bag and crush them with a rolling pin.
Combine the cookie crumbs, melted butter, and brown sugar in a bowl.
Stir until everything resembles wet sand.
Pour the mixture into your prepared springform pan.
Use the bottom of a measuring cup or drinking glass to firmly press the crumbs into an even layer.
Bake the crust for approximately 8–10 minutes.
Remove it from the oven and allow it to cool while you prepare the remaining components.
Step 3: Make the Edible Cookie Dough
Beat the softened butter, brown sugar, and granulated sugar together until creamy.
Add the milk and vanilla extract and continue mixing until smooth.
Gradually mix in the heat-treated and cooled flour and salt.
Once a soft cookie dough forms, fold in the mini chocolate chips.
Now comes the hardest part: trying not to eat all the cookie dough before it reaches the cheesecake.
Divide the dough approximately in half.
One portion will go inside the cheesecake, while the other will be saved for decorating the top.
Roll or pinch the portion intended for the filling into small bite-sized pieces.
Place them in the refrigerator while you prepare the cheesecake mixture.
Step 4: Prepare the Cheesecake Filling
Place the softened cream cheese into a large mixing bowl.
Beat until smooth and creamy.
Add the granulated sugar and continue mixing until combined.
Next, add the sour cream, vanilla extract, and flour.
Mix just until smooth.
Add the eggs one at a time, mixing on low speed after each addition.
Avoid aggressively beating the mixture once the eggs have been added. Too much air incorporated into cheesecake batter can cause the cheesecake to rise dramatically while baking and then collapse or crack as it cools.
Finally, gently fold in the mini chocolate chips.
Step 5: Assemble the Cheesecake
Pour approximately half of the cheesecake batter over the prepared cookie crust.
Scatter small pieces of chilled cookie dough throughout the filling.
Pour the remaining cheesecake mixture over the cookie dough.
Smooth the top gently with a spatula.
You can add a few additional cookie dough pieces near the surface if you’d like them to peek through the finished cheesecake.
Step 6: Bake
For an especially creamy cheesecake with a reduced chance of cracking, use a water bath.
Place the foil-wrapped springform pan inside a larger roasting pan.
Carefully pour hot water into the roasting pan until it reaches roughly halfway up the outside of the springform pan.
Transfer everything to the oven.
Bake for approximately 60–75 minutes.
The edges should appear set while the center still has a slight jiggle when the pan is gently moved.
Don’t wait until the entire cheesecake appears completely firm. Cheesecake continues setting as it cools.
Step 7: Cool Slowly
When the cheesecake has finished baking, turn off the oven.
Crack the oven door open slightly and leave the cheesecake inside for approximately 45–60 minutes.
Slow cooling helps prevent dramatic temperature changes that can contribute to cracks.
Remove the cheesecake from the oven and water bath.
Let it continue cooling at room temperature until no longer warm.
Then refrigerate for at least 6 hours, although overnight is even better.
Cheesecake is one of those desserts where patience really pays off.
Step 8: Add the Cookie Dough Topping
Once the cheesecake has completely chilled, carefully remove the sides of the springform pan.
Take the remaining edible chocolate chip cookie dough and form it into small pieces or miniature cookie dough balls.
Scatter them generously across the cheesecake.
Sprinkle additional mini chocolate chips over everything.
You could stop right there and have a fantastic dessert.
But if we’re making Chocolate Chip Cookie Dough Cheesecake, we might as well have some fun.
Add swirls of whipped cream around the edge, drizzle chocolate sauce over individual slices, or sprinkle crushed chocolate chip cookies across the top.
Getting That Perfect Cheesecake Texture
Great cheesecake should be creamy without being runny and firm without becoming dry.
A few small details can make a big difference.
Use Room-Temperature Cream Cheese
Cold cream cheese doesn’t blend smoothly and can leave little lumps throughout the batter.
Allow your cream cheese to soften before beginning.
Don’t Overmix the Eggs
Once the eggs enter the bowl, mix only until they’re incorporated.
Cheesecake doesn’t need the same vigorous mixing that many cakes require.
Don’t Overbake
One of the biggest cheesecake mistakes is waiting for the center to become completely solid.
The center should still wobble slightly when you remove the cheesecake from the oven.
Give It Enough Time to Chill
A warm cheesecake isn’t going to have the same texture as a properly chilled one.
Give it at least six hours in the refrigerator.
Overnight chilling is ideal.
Why Mini Chocolate Chips Work So Well
Regular chocolate chips certainly work, but mini chocolate chips are especially good in this recipe.
They distribute more evenly throughout the cheesecake and cookie dough, meaning you’re more likely to get chocolate in every bite.
They also don’t overwhelm the smooth cheesecake texture.
Of course, there’s nothing stopping serious chocolate lovers from using a mixture of mini chips and chopped chocolate.
Try a Chocolate Cookie Crust
Want even more chocolate?
Replace the chocolate chip cookie crust with crushed chocolate sandwich cookies.
Mix approximately 2 cups of chocolate cookie crumbs with 5 tablespoons of melted butter and prepare the crust using the same method.
The darker chocolate flavor creates an even stronger contrast with the pale cheesecake filling and golden cookie dough.
Add a Chocolate Ganache Layer
For an even more decadent presentation, add chocolate ganache after the cheesecake has chilled.
Heat ½ cup heavy cream until steaming but not boiling.
Pour it over 1 cup chopped semisweet chocolate.
Allow it to sit for several minutes before stirring until smooth.
Let the ganache cool slightly and then pour it over the chilled cheesecake.
Add your cookie dough pieces while the ganache is still soft.
Now you’re somewhere between cheesecake, cookie dough, and a giant chocolate truffle—and that’s not a bad place for dessert to be.
Make Individual Cookie Dough Cheesecakes
This recipe can also inspire miniature cheesecakes.
Line muffin tins with cupcake liners and place cookie crumbs in the bottom of each one.
Add cheesecake batter and little pieces of edible cookie dough.
Bake until the centers are just set.
Once chilled, top each miniature cheesecake with cookie dough pieces and chocolate chips.
They’re excellent for birthdays, parties, potlucks, holiday dessert tables, or anytime you’d rather serve individual portions instead of cutting a large cheesecake.
Make It a Birthday Cheesecake
Chocolate Chip Cookie Dough Cheesecake makes an impressive alternative to traditional birthday cake.
Add colorful sprinkles to the edible cookie dough and cheesecake filling.
Decorate the top with whipped cream, miniature cookies, cookie dough balls, chocolate chips, and additional sprinkles.
Add candles and suddenly you’ve turned a cheesecake into a full birthday centerpiece.
How to Get Clean Cheesecake Slices
After spending all that time creating a beautiful cheesecake, you don’t want messy slices.
Use a large sharp knife and run the blade under hot water.
Dry it completely before cutting.
Make one clean cut.
Then wipe the knife, warm it again, dry it, and make your next cut.
Repeating the process takes a little longer, but it creates dramatically cleaner slices.
This is especially useful with cookie dough cheesecake because you’ll be cutting through several different textures.
What to Serve With Chocolate Chip Cookie Dough Cheesecake
This cheesecake already has plenty happening, so it doesn’t necessarily need anything alongside it.
But you can make each serving even more impressive with:
- Fresh strawberries
- Fresh raspberries
- Whipped cream
- Chocolate sauce
- Caramel sauce
- Hot fudge
- Vanilla ice cream
- Chocolate ice cream
- Crushed cookies
- Additional chocolate chips
Coffee is another excellent pairing.
The slight bitterness of coffee helps balance the sweetness and richness of the cheesecake.
A cold glass of milk is hard to beat, too—especially considering the chocolate chip cookie inspiration behind the dessert.
How to Store It
Keep Chocolate Chip Cookie Dough Cheesecake refrigerated in an airtight container or tightly covered.
For the best flavor and texture, enjoy it within approximately 4–5 days.
Don’t leave cheesecake sitting at room temperature for extended periods because it contains dairy and eggs.
You can also freeze cheesecake.
For individual servings, cut the completely chilled cheesecake into slices and freeze them separately before transferring them into freezer-safe containers.
Then you can remove one slice whenever the cheesecake craving hits.
Allow frozen cheesecake to thaw overnight in the refrigerator before serving.
Perfect for Special Occasions
One of the best things about cheesecake is that it naturally feels like a special-occasion dessert.
Chocolate Chip Cookie Dough Cheesecake takes that feeling even further.
Consider making it for:
Birthdays, anniversaries, family dinners, holiday gatherings, potlucks, game nights, graduation celebrations, office parties, Valentine’s Day, Father’s Day, Mother’s Day, or simply a weekend when you want to make something memorable.
And sometimes you don’t need an occasion at all.
“Because I wanted cheesecake” is a perfectly acceptable reason.
The Ultimate Combination of Two Dessert Favorites
There is something wonderfully excessive about combining chocolate chip cookie dough and cheesecake.
You’re taking the buttery brown sugar and chocolate flavors of a classic cookie and pairing them with one of the richest, creamiest desserts around.
The cookie crust provides crunch.
The cheesecake brings smooth creaminess.
The cookie dough creates soft, chewy bites.
The mini chocolate chips deliver chocolate throughout the entire dessert.
And the cookie dough topping makes it instantly obvious that this isn’t an ordinary cheesecake.
Every layer contributes something different.
Dessert of the Day
Chocolate Chip Cookie Dough Cheesecake is the kind of dessert made for people who have trouble deciding between cookies and cheesecake.
With this recipe, you don’t have to choose.
You get a buttery cookie crust, thick and creamy cheesecake, edible chocolate chip cookie dough tucked throughout the filling, mini chocolate chips in practically every bite, and even more cookie dough piled on top.
It’s decadent.
It’s impressive.
It’s unapologetically sweet.
And it’s exactly the kind of dessert that can turn an ordinary dinner into something worth remembering.
Sometimes dessert should be simple.
Other times, dessert should be completely over the top.
Today feels like a cookie-dough-cheesecake kind of day.
If you had a slice of Chocolate Chip Cookie Dough Cheesecake sitting in front of you right now, would you add chocolate sauce, caramel sauce, whipped cream—or eat it exactly as it is?
