There are some nights when you want a homemade dinner that tastes like you spent hours in the kitchen—but you definitely don’t want to spend hours cooking or cleaning up afterward.

That’s exactly where One-Pot Italian Sausage and Tortellini comes in.

This hearty dinner combines savory Italian sausage, tender cheese-filled tortellini, tomatoes, garlic, Italian herbs, and a creamy sauce in one pot. It’s warm, filling, flavorful, and easy enough for a busy weeknight.

Best of all, there’s only one pot to wash when dinner is finished.

Why You’ll Love This Recipe

One-pot meals have become favorites in many kitchens for a good reason. They’re convenient without requiring you to sacrifice flavor.

This Italian sausage and tortellini recipe gives you everything you want from a comforting pasta dinner: rich sausage, cheesy pasta, a creamy tomato sauce, and plenty of Italian flavor.

It’s also easy to customize. You can make it spicy, add vegetables, increase the cheese, or adjust the sauce to your family’s preferences.

Ingredients

1 pound Italian sausage

1 tablespoon olive oil, if needed

1 small yellow onion, diced

3 cloves garlic, minced

1 can (14.5 ounces) diced tomatoes

2 tablespoons tomato paste

2 cups chicken broth

1 teaspoon Italian seasoning

1/2 teaspoon dried basil

1/2 teaspoon dried oregano

1/4 teaspoon crushed red pepper flakes, optional

Salt and freshly ground black pepper, to taste

1 package (about 18–20 ounces) refrigerated cheese tortellini

3/4 cup heavy cream

2 cups fresh baby spinach

1/2 cup freshly grated Parmesan cheese

1 cup shredded mozzarella cheese

Fresh basil or parsley for garnish

Choosing Your Italian Sausage

One of the easiest ways to change the personality of this dish is by changing the sausage.

Mild Italian sausage creates a family-friendly meal with plenty of traditional Italian flavor.

Hot Italian sausage gives the tortellini a spicy kick. If you use hot sausage, you may want to leave out the red pepper flakes until you’ve tasted the sauce.

You can also use a combination of mild and hot sausage for something in between.

Chicken or turkey Italian sausage can work if you’re looking for a lighter alternative.

How to Make One-Pot Italian Sausage and Tortellini
Step 1: Brown the Sausage

Heat a large, deep skillet, Dutch oven, or heavy-bottomed pot over medium-high heat.

Remove the sausage from its casing if necessary and add it to the pot.

Cook for approximately 5–7 minutes, breaking the sausage into bite-sized pieces with a wooden spoon as it browns.

Once the sausage is cooked through, drain excessive grease if necessary. Leave a small amount behind because it adds tremendous flavor to the finished sauce.

Step 2: Add the Onion and Garlic

Add the diced onion directly to the sausage.

Cook for approximately 3–4 minutes, stirring occasionally, until the onion begins to soften.

Add the minced garlic and cook for another 30–60 seconds.

Garlic can burn quickly, so don’t let it sit unattended.

By now, your kitchen should already smell incredible.

Step 3: Build the Tomato Sauce

Add the diced tomatoes, tomato paste, chicken broth, Italian seasoning, basil, oregano, and optional crushed red pepper flakes.

Stir everything together, making sure the tomato paste is completely incorporated into the liquid.

Season lightly with salt and black pepper.

Remember that the sausage, broth, tortellini, and Parmesan can all contain salt, so it’s better to add more seasoning toward the end than to make the dish too salty at the beginning.

Bring the mixture to a gentle simmer.

Step 4: Cook the Tortellini

Add the refrigerated tortellini directly to the sauce.

There’s no need to boil another pot of water.

That’s the beauty of this recipe.

Stir everything together and reduce the heat to medium-low. Cover and cook according to the tortellini package directions, usually about 5–8 minutes, stirring occasionally.

The pasta will absorb some of the flavorful cooking liquid while releasing starch into the sauce.

That starch helps give the sauce its wonderfully silky texture.

Step 5: Make It Creamy

Once the tortellini is nearly tender, reduce the heat to low.

Pour in the heavy cream and stir gently.

You don’t want the sauce boiling aggressively after adding the cream.

Allow everything to cook for another 2–3 minutes.

The tomato sauce will transform into a beautiful creamy tomato sauce that coats the sausage and tortellini.

Step 6: Add the Spinach

Add the fresh spinach.

It might look like a lot when you first put it into the pot, but spinach wilts dramatically as it cooks.

Gently stir it into the hot sauce for approximately 1–2 minutes or until wilted.

This is an easy way to add vegetables without changing the comforting character of the meal.

Step 7: Bring on the Cheese

Add the grated Parmesan and approximately half of the mozzarella.

Stir until melted.

Sprinkle the remaining mozzarella across the top.

Cover the pot for another minute or two, allowing the cheese to melt.

For an extra cheesy finish, you can add additional Parmesan right before serving.

What Makes This Recipe So Good?

The magic happens because everything is cooked together.

When pasta is normally boiled separately, much of its starch disappears with the cooking water. With this one-pot method, some of that starch stays in the sauce.

The sausage also leaves behind flavorful browned bits that become incorporated into the tomato sauce.

Then you add cream and cheese.

The result is a sauce that’s creamy, savory, cheesy, slightly tangy, and loaded with Italian flavor.

Every tortellini becomes coated in that sauce.

And every bite has the possibility of cheese-filled pasta, Italian sausage, tomato, garlic, spinach, and Parmesan.

Want It Spicier?

This recipe is incredibly easy to turn up a notch.

Use hot Italian sausage and increase the crushed red pepper flakes to about 1/2 teaspoon.

You could also add sliced hot cherry peppers or Calabrian chili peppers.

Just remember that it’s easier to add heat than remove it.

Start small and taste as you go.

Vegetables You Can Add

Spinach is an easy choice, but it’s certainly not your only option.

Try adding:

Sliced mushrooms

Diced bell peppers

Chopped zucchini

Kale

Broccoli florets

Sun-dried tomatoes

Artichoke hearts

If you’re using vegetables that take longer to cook, such as mushrooms or peppers, sauté them with the onions before adding the liquid.

Make It Extra Creamy

For an even richer dinner, increase the heavy cream to 1 cup.

You can also add 2–4 ounces of softened cream cheese after the tortellini cooks.

Stir until completely melted.

This produces an incredibly rich sauce that’s somewhere between a tomato cream sauce and a cheesy pasta sauce.

Make It Less Creamy

Not everyone wants a heavy cream sauce.

You can reduce the heavy cream to 1/2 cup or leave it out completely.

Without the cream, you’ll have more of a traditional tomato-based Italian sausage and tortellini skillet.

It’s still delicious.

Don’t Overcook the Tortellini

This is probably the most important tip for the entire recipe.

Refrigerated tortellini cooks quickly.

You want it tender but still able to hold its shape.

If you cook tortellini too long, it can become overly soft and eventually split apart.

Check the package instructions because cooking times can vary considerably between brands.

What to Serve With Italian Sausage and Tortellini

This is already a complete dinner, especially with spinach included.

However, a few simple sides can make it even better.

Garlic bread is probably my first choice. It’s perfect for soaking up the creamy tomato sauce remaining at the bottom of your bowl.

You could also serve it with a simple Caesar salad, Italian salad, roasted vegetables, or warm crusty bread.

If you’re serving several people, place some grated Parmesan, crushed red pepper flakes, and chopped fresh basil on the table so everyone can customize their bowl.

Storage

Allow leftovers to cool before transferring them to an airtight container.

Store them in the refrigerator for up to 3–4 days.

Keep in mind that the tortellini will continue absorbing sauce while sitting in the refrigerator, so the dish may be considerably thicker the following day.

That’s completely normal.

How to Reheat It

Place the desired amount in a saucepan over low to medium-low heat.

Add a splash of chicken broth, milk, or cream to loosen the sauce.

Stir occasionally until heated through.

You can also microwave individual portions in short intervals, stirring between each interval.

Add a little Parmesan after reheating to bring some fresh cheesy flavor back to the dish.

Easy Recipe Variations

Once you’ve made this recipe once, there are plenty of ways to change it.

For a meat lovers version, add cooked bacon or diced pepperoni along with the sausage.

For a vegetable-packed version, add mushrooms, peppers, zucchini, and spinach.

For a four-cheese version, use cheese tortellini and add Parmesan, mozzarella, ricotta, and a little fontina.

For a spicy version, use hot Italian sausage, red pepper flakes, and chopped Calabrian chilies.

For a chicken version, replace the sausage with diced or shredded cooked chicken.

That’s one of the great things about a simple one-pot recipe: it gives you a foundation you can customize again and again.

Perfect for Busy Nights

We all have those days when making an elaborate dinner isn’t happening.

Maybe you’ve been working all day.

Maybe the kids have activities.

Maybe you’re exhausted.

Or maybe you simply don’t feel like spending an hour cooking dinner and another 20 minutes washing dishes.

That doesn’t mean dinner has to come from a drive-thru.

A meal like One-Pot Italian Sausage and Tortellini proves that homemade comfort food can still be manageable.

Most of the ingredients are inexpensive, easy to find, and simple to keep on hand.

The entire meal can be on the table in roughly 35 minutes.

Recipe of the Day Tip

Keep a package of refrigerated tortellini in your refrigerator or freezer.

It can turn into a quick dinner surprisingly easily.

Combine tortellini with marinara, pesto, Alfredo sauce, vegetables, chicken, sausage, or simply butter, garlic, and Parmesan.

It’s one of those ingredients that can rescue dinner when you haven’t planned anything.

Final Thoughts

One-Pot Italian Sausage and Tortellini is the kind of recipe that checks almost every box.

It’s easy.

It’s hearty.

It’s cheesy.

It’s comforting.

It’s packed with flavor.

And most importantly for a busy evening, it doesn’t leave your kitchen covered in dirty pots and pans.

Add some spinach, sprinkle fresh Parmesan over the top, grab a piece of garlic bread, and dinner is ready.
