There is something special about waking up to the smell of a warm breakfast baking in the oven. When that breakfast is loaded with eggs, crispy potatoes, savory sausage, melted cheese, and colorful vegetables, it becomes the kind of meal that can bring everyone to the table.

Today’s Breakfast of the Day is a Cheesy Farmhouse Breakfast Casserole—a hearty, comforting breakfast that combines many of the foods we love in a classic country-style morning meal into one easy dish.

Whether you are feeding your family on a Sunday morning, hosting a holiday brunch, preparing breakfast for overnight guests, or simply want leftovers for the week ahead, this casserole is worth adding to your recipe collection.

Why You’ll Love This Breakfast Casserole

Breakfast casseroles are popular for a good reason. Instead of standing over the stove cooking eggs, potatoes, sausage, and vegetables separately, you can layer everything together and let the oven do most of the work.

This farmhouse version is especially satisfying because it has a little bit of everything.

You get fluffy eggs, seasoned breakfast sausage, tender potatoes, sautéed peppers and onions, and plenty of melted cheese in every serving.

Even better, the recipe is flexible. You can change the meat, vegetables, or cheese depending on what you already have in the refrigerator.

Cheesy Farmhouse Breakfast Casserole

Prep Time: 20 minutes
Cook Time: 45–55 minutes
Total Time: About 1 hour 15 minutes
Servings: 8–10

Ingredients

  • 1 pound breakfast sausage
  • 1 package (about 20 ounces) refrigerated or frozen shredded hash browns, thawed if frozen
  • 10 large eggs
  • 1 cup whole milk
  • 2 cups shredded cheddar cheese, divided
  • 1/2 cup shredded Monterey Jack cheese
  • 1 medium bell pepper, diced
  • 1 small onion, diced
  • 2 green onions, sliced
  • 1 tablespoon butter or olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Chopped fresh parsley or green onions for garnish, optional

Directions

1. Prepare the Oven and Baking Dish

Preheat your oven to 375°F.

Lightly grease a 9-by-13-inch baking dish with butter or nonstick cooking spray.

2. Cook the Sausage

Place the breakfast sausage in a large skillet over medium heat.

Break it into smaller pieces with a wooden spoon or spatula and cook until browned and completely cooked through.

Drain away excess grease and transfer the sausage to a plate.

3. Cook the Vegetables

Add the butter or olive oil to the same skillet.

Add the diced onion and bell pepper and cook for about 4–5 minutes, or until they begin to soften.

You don’t need to cook them completely because they will continue cooking in the oven.

4. Build the Casserole

Spread the hash browns evenly across the bottom of the prepared baking dish.

Add the cooked sausage over the potatoes, followed by the sautéed onions and peppers.

Sprinkle about 1 1/2 cups of cheddar cheese and the Monterey Jack cheese over the top.

5. Prepare the Egg Mixture

In a large mixing bowl, whisk together the eggs and milk.

Add the garlic powder, smoked paprika, salt, and black pepper.

Continue whisking until everything is thoroughly combined.

Pour the egg mixture evenly over the casserole.

Use a spatula or spoon to gently press the ingredients down so the egg mixture can work its way throughout the casserole.

6. Add More Cheese

Sprinkle the remaining cheddar cheese over the top.

Because when you’re making a Cheesy Farmhouse Breakfast Casserole, there should be no shortage of cheese.

7. Bake

Place the casserole in the preheated oven and bake uncovered for approximately 45–55 minutes.

The casserole is ready when the center is set, the eggs are cooked through, and the cheese on top is melted and lightly golden.

If the cheese begins browning too quickly, loosely cover the casserole with aluminum foil for the remaining cooking time.

8. Let It Rest

Remove the casserole from the oven and allow it to rest for about 5–10 minutes before slicing.

Finish with chopped parsley or sliced green onions if desired.

Then serve it warm.

Make It Your Own

One of the best things about farmhouse-style cooking is that recipes don’t have to be complicated or rigid. They’re often about taking simple ingredients and turning them into something filling and delicious.

This casserole is perfect for experimenting.

Instead of breakfast sausage, try crispy bacon, diced ham, turkey sausage, or a combination of meats.

For additional vegetables, consider mushrooms, spinach, tomatoes, jalapeños, broccoli, or extra peppers.

You can also experiment with the cheese.

Cheddar provides that familiar breakfast-casserole flavor, but pepper Jack can add a little heat. Colby Jack makes it extra creamy, while smoked Gouda can give the entire dish a deeper, smoky flavor.

Turn Up the Heat

If your family enjoys spicy breakfasts, this casserole is easy to kick up a notch.

Add diced jalapeños to the vegetables or use hot breakfast sausage instead of mild sausage.

You can also sprinkle crushed red pepper into the egg mixture or add pepper Jack cheese.

Serve each slice with your favorite hot sauce or salsa for even more flavor.

Make It the Night Before

Busy morning ahead?

Prepare the casserole the night before.

Cook the sausage and vegetables, assemble the casserole, cover the baking dish tightly, and refrigerate it overnight.

The next morning, remove it from the refrigerator while the oven preheats.

Because the casserole will be cold, it may require a little additional baking time. Make sure the center reaches 160°F and the eggs are fully set before serving.

This makes the recipe especially convenient for Christmas morning, Easter brunch, family gatherings, or weekends when you would rather spend time with your guests than stand in the kitchen.

What to Serve With It

The Cheesy Farmhouse Breakfast Casserole can easily stand on its own, but adding a few sides can turn it into a complete brunch spread.

Try serving it alongside fresh fruit, toast, biscuits, English muffins, pancakes, or cinnamon rolls.

For something fresh and simple, a bowl filled with strawberries, blueberries, grapes, pineapple, and melon provides a nice contrast to the rich casserole.

And, of course, don’t forget the coffee.

Storing Leftovers

Allow leftover casserole to cool before transferring it to an airtight container.

Store it in the refrigerator and enjoy within 3–4 days.

Individual portions can be reheated in the microwave, making this a convenient breakfast for busy mornings.

You can also portion the casserole ahead of time so you have an easy grab-and-reheat breakfast waiting in the refrigerator.

A Breakfast Made for Sharing

Some breakfasts are designed to be quick. Others are designed to slow things down.

This Cheesy Farmhouse Breakfast Casserole feels like the second kind.

It’s the type of breakfast you put in the middle of the table while everyone grabs a plate, pours another cup of coffee, and sticks around for another conversation.

You don’t need fancy ingredients or complicated techniques. Sometimes eggs, potatoes, sausage, vegetables, and plenty of melted cheese are all you need to create something everyone looks forward to eating.

And if someone goes back for seconds?

That’s probably the best compliment a breakfast casserole can receive.

Would you make your Cheesy Farmhouse Breakfast Casserole with sausage, bacon, ham—or load it up with all three?
