Some breakfasts are designed to be quick and light. Others are meant to fill the kitchen with incredible aromas, bring everyone to the table, and keep you satisfied well into the day. Cowboy Biscuits and Gravy definitely belongs in the second category.
This hearty breakfast combines warm, fluffy biscuits with a thick, creamy sausage gravy loaded with savory flavor. It is simple country cooking at its best—the kind of meal that feels right at home on a ranch, around a campfire, or sitting on the kitchen table during a slow weekend morning.
Biscuits and gravy have long been associated with Southern and country-style American cooking. The ingredients are inexpensive, the preparation is straightforward, and the finished dish is incredibly satisfying.
Our cowboy version takes that familiar comfort food and makes it even heartier with plenty of sausage, black pepper, and optional additions such as bacon, cheddar cheese, jalapeños, or eggs.
If you wake up hungry, this is the breakfast for you.
Why Cowboy Biscuits and Gravy Make a Great Breakfast
There is something special about breaking open a warm biscuit and covering it with freshly made sausage gravy.
The biscuit absorbs some of the creamy gravy while still maintaining its buttery texture. Every bite delivers a combination of soft biscuit, savory sausage, creamy sauce, and peppery seasoning.
It is also an easy breakfast to customize.
Want more meat? Add bacon.
Want some heat? Toss in diced jalapeños.
Want an even bigger breakfast? Put a couple of fried eggs on top.
Want extra richness? Sprinkle shredded cheddar cheese over everything.
That flexibility is part of what makes Cowboy Biscuits and Gravy such a fun breakfast.

You can also use your favorite refrigerated or frozen biscuits when you need a faster breakfast.
For the Cowboy Sausage Gravy
- 1 pound breakfast sausage
- 1/4 cup all-purpose flour
- 3 cups whole milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon freshly ground black pepper
- Salt to taste
- Pinch of cayenne pepper, optional
- 1 tablespoon butter, optional
Optional Cowboy Toppings
- Crumbled cooked bacon
- Shredded cheddar cheese
- Sliced jalapeños
- Chopped green onions
- Fried eggs
- Hot sauce
- Extra black pepper
Step 1: Make the Biscuits
Preheat your oven to 425°F.
Combine the flour, baking powder, salt, and sugar in a large mixing bowl.
Add the cold cubed butter.
Using a pastry cutter, fork, or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs. Small pieces of butter should still be visible. Those cold pieces of butter help create flaky layers as the biscuits bake.
Pour in the cold buttermilk and gently stir until the dough begins coming together.
Avoid overmixing. Biscuit dough should be handled as little as possible if you want tender biscuits.
Transfer the dough to a lightly floured surface.
Gently press it into a rectangle about an inch thick. Fold the dough over itself, press it down again, and repeat this process a couple of times. These folds help create layers.
Cut the biscuits using a biscuit cutter or drinking glass.
Place them on a baking sheet and bake for approximately 12–15 minutes, or until the tops are golden brown.
Brush the warm biscuits with melted butter immediately after removing them from the oven.
Now comes the gravy.
Step 2: Brown the Sausage
Place a large skillet over medium heat.
Add the breakfast sausage and cook while breaking it into small pieces with a wooden spoon or spatula.
Continue cooking until the sausage is completely browned.
Do not immediately drain all the fat from the skillet. A little sausage fat is important because it combines with the flour to create the base of the gravy.
If your sausage is extremely lean, add a tablespoon of butter.
Step 3: Make the Gravy
Sprinkle the flour evenly over the cooked sausage.
Stir continuously until the sausage is coated.
Cook the flour and sausage together for about one to two minutes. This removes the raw flour taste and helps create a smooth gravy.
Slowly pour in the milk while stirring.
Adding the milk gradually helps prevent lumps.
Continue cooking over medium heat, stirring frequently, until the gravy begins to thicken.
This usually takes several minutes.
Remember that sausage gravy continues thickening as it cools, so remove it from the heat when it is slightly thinner than your desired final consistency.
Step 4: Season the Cowboy Gravy
Add the garlic powder, onion powder, black pepper, and a small amount of salt.
Taste before adding much salt because breakfast sausage can already contain plenty of seasoning.
For a little cowboy kick, add a pinch of cayenne pepper.
If you enjoy spicy breakfasts, diced jalapeños or a few shakes of hot sauce can take the gravy even further.
Step 5: Build Your Cowboy Breakfast
Split two warm biscuits in half and place them on a plate.
Spoon a generous amount of sausage gravy over the biscuits.
And when I say generous, I mean generous.
Biscuits and gravy are not the breakfast for carefully measuring a tablespoon of gravy.
Cover those biscuits.
Finish with freshly cracked black pepper.
From there, customize your plate however you like.
Turn It Into a Cowboy Breakfast Platter
Cowboy Biscuits and Gravy can easily become the centerpiece of a huge country breakfast.
Serve them alongside scrambled eggs, fried eggs, bacon, country potatoes, hash browns, or fresh fruit.
For an especially hearty version, place two fried eggs directly over the biscuits before pouring the gravy over everything.
Add crumbled bacon and shredded cheddar cheese.
Finish with green onions and hot sauce.
You now have the kind of breakfast that might make lunch unnecessary.
The Secret to Great Sausage Gravy
Good sausage gravy isn’t complicated.
The biggest mistake is rushing it.
Allow the sausage to brown properly before adding the flour. Those browned pieces provide a tremendous amount of flavor.
Once you add the flour, give it a minute or two to cook before adding the milk.
Then add the milk gradually.
Finally, don’t underestimate black pepper.
Traditional sausage gravy should have noticeable pepper flavor. Freshly cracked black pepper makes a big difference compared with using only a tiny amount of pre-ground pepper.
Make It Extra Meaty
This is called Cowboy Biscuits and Gravy, so there is nothing wrong with adding more meat.
Cook four to six strips of bacon until crispy.
Crumble the bacon and sprinkle it over the finished gravy.
You could also brown diced ham or smoked sausage and add it to the breakfast sausage.
For an especially hearty variation, combine breakfast sausage and chopped bacon directly in the gravy.
It may not be an everyday breakfast, but it makes an impressive weekend meal.
Spicy Cowboy Biscuits and Gravy
If you like heat, there are several ways to spice things up.
Use hot breakfast sausage instead of mild sausage.
Add diced jalapeños while browning the meat.
Season the gravy with cayenne pepper.
Then finish everything with sliced jalapeños and your favorite hot sauce.
Pepper Jack cheese can also replace cheddar for another layer of heat.
Cheesy Cowboy Biscuits and Gravy
Cheese isn’t required for traditional biscuits and gravy, but this is the cowboy version.
After the gravy has thickened, reduce the heat and stir in approximately one cup of shredded sharp cheddar cheese.
Continue stirring until melted.
The result is an incredibly rich sausage-and-cheese gravy.
Pour it over warm biscuits and finish with bacon and green onions.
What to Serve With Cowboy Biscuits and Gravy
Because biscuits and gravy are already rich and filling, you can keep the side dishes simple.
Fresh fruit provides a nice contrast to the savory gravy.
Eggs are another natural choice.
If you’re feeding a hungry crowd, add crispy breakfast potatoes or hash browns.
And don’t forget the coffee.
A hot cup of black coffee alongside biscuits and gravy feels like it belongs on a farmhouse breakfast table.
Making Breakfast for a Crowd
Cowboy Biscuits and Gravy are excellent when you’re feeding several people.
The gravy can easily be doubled.
Use two pounds of breakfast sausage, approximately six cups of milk, and enough flour to properly thicken the mixture.
Bake several trays of biscuits and keep them warm until serving.
Then set up a toppings station with bowls of shredded cheese, bacon, jalapeños, green onions, and hot sauce.
Everyone can build their own cowboy breakfast.
It works especially well for weekend family breakfasts, holiday mornings, camping gatherings, brunches, or game-day breakfasts.
Can You Make the Gravy Ahead of Time?
Yes.
Prepare the sausage gravy and refrigerate it in an airtight container.
When you’re ready to serve it, transfer the gravy to a saucepan or skillet and warm it over low heat.
The gravy will probably become much thicker after refrigeration.
Simply stir in a splash of milk until you reach the desired consistency.
Fresh biscuits are best, but they can also be reheated briefly in the oven.
Using Store-Bought Biscuits
Homemade biscuits are fantastic, but breakfast doesn’t always need to become a major cooking project.
Refrigerated or frozen biscuits work perfectly well.
Bake them according to the package instructions while preparing your sausage gravy.
You can still brush the finished biscuits with melted butter to give them a little homemade touch.
The most important part is serving everything hot.
Leftover Cowboy Gravy
If you somehow have leftover gravy, don’t throw it away.
Sausage gravy can be used for more than biscuits.
Spoon it over breakfast potatoes.
Pour it over toast.
Use it on chicken-fried steak.
Serve it over scrambled eggs.
You could even create a breakfast bowl using crispy potatoes, scrambled eggs, sausage gravy, cheddar cheese, and green onions.
Sometimes leftovers lead to an entirely new breakfast.
A Breakfast Built for Hungry Mornings
There is a reason biscuits and gravy continue showing up on breakfast tables generation after generation.
They are simple.
They are affordable.
They are comforting.
And they are incredibly satisfying.
Cowboy Biscuits and Gravy take those qualities and push them a little further.
You’ve got fluffy biscuits covered with thick sausage gravy, plenty of black pepper, and endless possibilities for turning the dish into your own over-the-top country breakfast.
Add bacon.
Add eggs.
Add cheese.
Add jalapeños.
Or keep things simple and enjoy a plate of warm biscuits covered with homemade sausage gravy.
Either way, you have a breakfast that doesn’t apologize for being hearty.
