  • 1 pound breakfast sausage
  • 6 large eggs
  • 2 cups frozen diced hash brown potatoes
  • 1 small onion, diced
  • 1 small red bell pepper, diced
  • 1 small green bell pepper, diced
  • 2 cups shredded cheddar cheese, divided
  • 1/2 cup shredded Monterey Jack cheese
  • 2 tablespoons butter
  • 2 tablespoons milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon chili powder
  • Salt and black pepper to taste

For the Creamy Cheese Sauce

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • Salt and pepper to taste

Optional Toppings

  • Chopped green onions
  • Fresh cilantro
  • Diced tomatoes
  • Sliced avocado
  • Salsa
  • Sour cream

How to Make Cowboy Breakfast Enchiladas

Step 1: Cook the Breakfast Sausage

Preheat your oven to 375°F.

Place the breakfast sausage in a large skillet over medium heat. Break the sausage apart with a spatula and cook until completely browned.

Drain excess grease from the skillet and transfer the cooked sausage to a plate.

For even more cowboy-style flavor, substitute spicy sausage or use half breakfast sausage and half chopped bacon.

Step 2: Cook the Potatoes

Add the diced hash brown potatoes to the same skillet.

Cook them over medium-high heat until they’re browned and slightly crispy. You want the potatoes to develop some texture because they’ll soften slightly once the enchiladas bake.
