There is something satisfying about starting the morning with a breakfast that is warm, hearty, and packed with flavor. Today’s Breakfast of the Day — Chicken Sausage Frittata checks all those boxes while still being surprisingly simple to prepare.

A frittata is one of those breakfast dishes that looks impressive when it reaches the table but doesn’t require complicated cooking techniques. Eggs provide the foundation, chicken sausage brings savory flavor and protein, vegetables add freshness and color, and a little cheese pulls everything together.

Even better, this Chicken Sausage Frittata works for much more than breakfast. Serve it for brunch on the weekend, prepare it ahead for busy weekday mornings, or pair it with a salad for an easy lunch or dinner.

What Is a Frittata?

A frittata is an Italian-style egg dish that is somewhat similar to an omelet or crustless quiche. Instead of folding the ingredients inside the eggs, everything is combined and cooked together.

One of the biggest advantages of making a frittata is flexibility. Once you understand the basic method, you can change the vegetables, cheese, meat, and seasonings depending on what you have available.

Today, chicken sausage is the star.

Chicken sausage provides plenty of savory flavor without overwhelming the eggs and vegetables. Depending on the variety you choose, you can also completely change the personality of the dish. Italian chicken sausage creates a classic savory breakfast, while spicy chicken sausage gives it a little kick. Apple chicken sausage can even add a slightly sweet element that works beautifully for brunch.

Chicken Sausage Frittata

Prep Time: 10 minutes
Cook Time: 20–25 minutes
Total Time: About 35 minutes
Servings: 6

Ingredients

  • 8 large eggs
  • 4 chicken sausage links, sliced or crumbled
  • 1/4 cup milk
  • 1 tablespoon olive oil
  • 1/2 medium onion, diced
  • 1/2 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • 1 cup fresh baby spinach
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon smoked paprika
  • Salt to taste
  • Freshly ground black pepper to taste
  • Chopped parsley or green onions for garnish

How to Make It

1. Preheat the Oven

Preheat your oven to 375°F.

Because the frittata begins on the stovetop and finishes in the oven, an oven-safe skillet such as a cast-iron skillet works especially well.

2. Cook the Chicken Sausage

Heat the olive oil in your skillet over medium heat.

Add the sliced or crumbled chicken sausage and cook until heated through and lightly browned. If you’re using raw chicken sausage rather than fully cooked sausage, cook it completely according to the package directions before continuing.

Remove the sausage from the skillet and set it aside.

3. Cook the Vegetables

Add the onion and bell peppers to the same skillet.

Cook for approximately 4–5 minutes, stirring occasionally, until the vegetables begin to soften.

Add the garlic and cook for another 30 seconds.

Finally, add the spinach and stir until it wilts. This should only take about a minute.

Return the cooked chicken sausage to the skillet and distribute everything evenly.

4. Prepare the Eggs

Crack the eggs into a large mixing bowl.

Add the milk, Italian seasoning, smoked paprika, salt, and black pepper.

Whisk everything together until the eggs are completely combined and slightly frothy.

Stir approximately half of the cheddar and Parmesan into the egg mixture.

5. Add the Eggs

Pour the egg mixture evenly over the sausage and vegetables.

Allow the frittata to cook on the stovetop over medium-low heat for approximately 2–3 minutes. You should notice the edges beginning to set while the center remains mostly liquid.

Sprinkle the remaining cheese over the top.

6. Finish in the Oven

Carefully transfer the oven-safe skillet to the preheated oven.

Bake for approximately 12–15 minutes, or until the eggs are set in the center.

Avoid overcooking the frittata. You want the eggs cooked through but still tender and moist.

7. Rest and Serve

Remove the skillet from the oven and allow the frittata to rest for about 5 minutes.

Garnish with chopped parsley or green onions before slicing it into wedges.

Serve warm and enjoy!

What to Serve With a Chicken Sausage Frittata

This frittata can easily stand on its own, but adding a couple of sides can transform it into a complete weekend breakfast or brunch.

Try serving it with roasted breakfast potatoes, fresh fruit, avocado slices, whole-grain toast, sourdough toast, a simple green salad, or a warm biscuit.

And, of course, a hot cup of coffee pairs perfectly with it.

For brunch, you can place the entire skillet in the center of the table and surround it with toast, fruit, potatoes, and other breakfast favorites.

Make It Your Own

One reason frittatas are worth adding to your regular breakfast rotation is that you don’t have to make the same version twice.

Want some heat? Add diced jalapeños, crushed red pepper flakes, or spicy chicken sausage.

Want more vegetables? Mushrooms, broccoli, tomatoes, zucchini, asparagus, and kale can all work.

You can also change the cheese. Mozzarella creates a milder flavor, pepper jack adds some spice, feta provides a salty tang, and goat cheese gives the frittata a creamy texture.

If you have vegetables sitting in the refrigerator that need to be used, a frittata can be one of the easiest ways to turn them into breakfast.

A Great Meal-Prep Breakfast

Busy mornings are often when breakfast gets pushed aside. That’s another reason this Chicken Sausage Frittata is so useful.

Make one ahead of time, slice it into individual portions, and refrigerate the leftovers in an airtight container. You can then reheat a slice for a quick breakfast.

It’s much easier than cooking eggs and sausage from scratch every morning.

The frittata can generally be refrigerated for 3–4 days when stored properly. Reheat individual portions until hot before serving.

You can even place a slice between toasted English muffin halves or inside a breakfast sandwich for something different.

Why Chicken Sausage Works So Well

Traditional breakfast sausage is delicious, but chicken sausage offers another flavorful option and comes in an enormous variety of seasonings.

You can find chicken sausage flavored with garlic, herbs, peppers, cheese, apples, spinach, sun-dried tomatoes, and more.

That means simply changing the sausage can create an entirely different frittata.

For a Mediterranean-inspired version, try spinach-and-feta chicken sausage with tomatoes and feta cheese.

For something spicy, combine hot Italian chicken sausage with peppers, onions, pepper jack cheese, and jalapeños.

For an autumn breakfast, apple chicken sausage can be paired with caramelized onions and sharp cheddar.

The basic recipe becomes a starting point rather than something you have to follow exactly every time.

Tips for the Perfect Frittata

The biggest secret is not overcooking the eggs. Eggs continue cooking slightly after the skillet leaves the oven, so remove the frittata once the center has just set.

It’s also important to cook watery vegetables before adding the eggs. Mushrooms, spinach, tomatoes, and zucchini can release moisture while cooking. Sautéing them first helps prevent a watery frittata.

Finally, don’t overload the skillet.

It can be tempting to throw every leftover vegetable and piece of cheese into your frittata, but too many ingredients can prevent the eggs from setting evenly. You want a good balance of eggs, sausage, vegetables, and cheese in every bite.

Breakfast of the Day

A good breakfast doesn’t have to be complicated.

Today’s Chicken Sausage Frittata brings together fluffy eggs, savory chicken sausage, colorful vegetables, and melted cheese in one skillet. It’s hearty enough for a weekend brunch but practical enough to prepare ahead for busy weekday mornings.

Best of all, you can customize it endlessly based on what’s already in your refrigerator.

So grab your skillet, whisk those eggs, and turn a handful of simple ingredients into a breakfast worth sitting down for.
